Chicken Casserole (meal 1; week 2)

Tonight's dinner was a casserole that is a great use of leftover chicken. This recipe comes from my childhood church's cookbook. Don't you find that church cookbooks have the best recipes?? If I am ever in need of a recipe, I always look there first.

Here is the recipe:

2 cans of cream of mushroom soup
2 cans of chicken noodle soup
2 eggs
1 1/4 cup of chicken broth
2-3 cups of diced, cooked chicken
12 slices of white bread, torn in bite sized pieces
2 teaspoons of parsley

Crushed cracker crumbs

Mix everything together and top with cracker crumbs. Pour into a 9x13 baking dish. Bake at 350° for 40 minutes.

I served this with some cooked spinach.

I actually froze half of this recipe to have at a later date. It freezes very well.

  1. Yummy. Sounds good! I'll have to try this sometime. I LOVE church cookbooks! Most of our family favorites are from church cookbooks.

  2. This is a really great recipe for someone who does not feel well. It is very bland (but very good). I ate it a lot when I was pregnant! I've also added peas to make it a one dish meal!
